How Does a Moka Pot Work?

The short version

A moka pot has three chambers: water in the bottom, coffee in a middle basket, and an empty top. As the base heats, steam pressure pushes the hot water up through the coffee and into the top chamber. It's powered by heat alone — no electricity, no pump — and works at about 1–1.5 bars of pressure.

The science: steam pressure at work

Here's what happens once you put it on the hob:

  1. The water heats up. In the sealed base, some of the water turns to steam and expands, building pressure above the water.
  2. The pressure pushes the water up. With nowhere else to go, that pressure forces the hot water up through the funnel and into the bed of coffee grounds.
  3. The water extracts the coffee. As it passes through the grounds, it dissolves the coffee's flavours and oils.
  4. Brewed coffee rises into the top. The coffee continues up the central spout and pools in the top chamber.
  5. The gurgle. When most of the water is gone, steam follows it up with a splutter — your signal that the brew is finished and to take it off the heat.

Why it's not quite espresso

A moka pot brews at roughly 1 to 1.5 bars of pressure. A true espresso machine uses about 9 bars — many times more. That's why a moka pot makes a rich, concentrated, espresso-style coffee but can't produce the thick crema of a real shot. Why this explains the "rules"

Once you see how it works, the brewing advice makes sense. Too much heat superheats the water and scorches the coffee (bitterness). Too fine a grind chokes the flow so pressure can't push through evenly. And you take the pot off at the gurgle because that's the moment the water's gone and only steam is left to burn the grounds.
